3 Light Lunches

Lunches that won't weigh you down

These are only 3 of multiple types and combos of lunches that you could have and still have energy for your afternoon. Theses lunches are based on energy and healthy eating.

The first lunch is a mixed green salad with argula, kale, spinach and romaine. Add in tomatoes, red onion, bell pepper, carrots. Also add in hard boiled eggs and turkey (if you are vegetarian or vegan substitute tofu for turkey and vegans drop the hard boiled eggs.) Last but definitely not least thrown in some dried cranberries, fresh strawberries, cantaloupe and some seeds. Done. Great energy salad, you will not be hungry but unstoppable.

The second lunch is Broccoli salad with pasta and eggs. Boil the wheat or non gluten pasta for 5 mins. Then add in broccoli and raw green beans. Boil for 5 more mins and drain and drop in bowl. In separate pan, boil eggs and then add to pasta, broccoli and beans. Top with a mixture of miso, 4 tbsp pasta water and oil, toss salad and top with sunflower seeds.

The last lunch for energy is a hot lunch for the colder months. You have tomato, pepper and beans. Heat the oil in a large pan on a medium heat. Fry the onion, celery and carrots for 10 mins until soft and golden, then add the peppers and fry for another 5 mins.


Stir in the garlic for a minute, then add the tomato purée, all the beans and chopped tomatoes, then swirl out the tomato cans with a splash of water and add to the pan with the stock cube, bay leaves, sugar and vinegar. Season and simmer, uncovered, for 25 mins until the sauce reduces to coat the beans and the peppers are soft. Leave to cool before storing in transportable containers. Will keep in the fridge for 3 - 4 days or freeze in portions and defrost in the fridge overnight. 


Choose your toppings

Sweet & spicy
Add diced dried apricots and 1 tbsp harissa. Top with yogurt swirled with more harissa, and toasted flaked almonds. 
Tex-Mex
Stir in ½ - 1 tbsp chipotle paste, shredded leftover roast chicken if you have any, and top with diced avocado, grated cheddar and coriander. 
Smoky BBQ beans
Stir in 1 tbsp smoky BBQ sauce and crumble over shop-bought crispy bacon, a dollop of soured cream or yogurt, and some chopped herbs. 
Added greens
Stir in some spinach and top with a sliced boiled egg. 
Beans on toast
Serve the beans on toast or bread, add a dash of Tabasco or chilli flakes, crumble over feta and drizzle with olive oil. 
Italian-inspired
Top with toasted croutons, chopped rosemary, lemon zest and parmesan.​

All 3 of these lunches are great for energy and will keep you going for the rest of your day, so walk the dog, go to that big corporate presentation, fly out to see that special person on the other coast. Never be sluggish again.
